Oaty high protein pancakes

Delicious and healthy pancakes

These high protein, delicious and flexible pancakes will no doubt become your favourite at the weekend too!  Flexible toppings mean you can personalise them to suit you and your family’s taste.

Ingredients

  • 1 tsp coconut oil
  • 4 tbsp oats
  • ½ tsp cinnamon
  • ¼ cup of plant milk or cow’s milk if you are not intolerant
  • 46g of cream cheese
  • 4 eggs

 

Optional extras

  • 1 serving of protein powder
  • Maca powder

Toppings

  • 1/2 banana
  • Mixed berries – frozen or fresh depending on the season
  • Yoghurt
  • Cinnamon
  • Mixed nuts
  • Maple syrup if you have a sweet tooth!

Method

Start by preparing the oats.  Add the oats, milk to a bowl and leave to soak for 30mins – 1 hour.

Once the oats have absorbed most of the milk, add the cheese, eggs, and cinnamon and whisk until the mixture is well combined and not too loose or too thick.  You can adjust the amount of milk or oats as you learn your preferences.

Then take a frying pan and melt the coconut oil over a medium heat and add the mixture and cook through.  You may need to grill the top of the pancake, depending on the size of the frying pan.  Divide the pancake into two servings.

Then add your favourite toppings!
