This Hummus recipe is a great source of plant protein and fibre. The perfect healthy lunchtime option. Some clients love it with an apple for their breakfast!
Ingredients
- 400g chickpeas
- 1 small garlic clove
- 3 tbs olive oil
- 1 tbs tahini
- Juice of ½ – 1 lemon (depending on your preferences)
- ½ tsp salt (optional)
- 1 tsp ground cumin
- 5-7 tbs water
Method
Put all ingredients in a food processor except 2 tbs of water and blitz until you have the texture you like.
Add the remaining water and more if you prefer.
You can play with garlic, lemon juice, salt and water quantities until you find the combination that you prefer.
Personally, I like it to be a bit lemony, but not too much garlic. Experiment until you find your perfect recipe!
