A protein rich sweet option, perect for when the sweet crvings just won’t quite or you just fancy something a bite sweet. A lovely afternoon tea partner!
Ingredients
- 4 bananas (Roughly chopped)
- 3 eggs
- 2 tsp vanilla
- 2 tbs maple syrup
- 1/4 cup / 60ml coconut oil (melted)
- 2.5 cups / 240grams ground almonds
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 cup / 190grams of blueberries or raspberries
Method
heat the oven to 170oC and line a loaf tin with baking paper.
Mix all dry ingredients together in a large bowl. Take another bowl and mash 3 bananas together, add the remaining banana, eggs, vanilla, coconut oil and mix gently. Add all the wet ingredients to the dry and fold together. Then add berries and fold together. Pour batter into lined loaf tin and bake for 55mins.
Berries can be frozen or fresh.
