Green Goddess Soup

This is a fabulous soup that contains an amazing array of anti-oxidents, polyphenols, protein and fibre – which also tastes great.  It is my go-to when not feeling the best and in January when I need a bit of a boost.

Ingredients

  • Half a bag of Spinach
  • 1 fennel bulb
  • 2 tsp fennel seeds
  • 1 courgette
  • 1 head of broccoli
  • 1 onion
  • 2 garlic cloves
  • 1 bunch of Kale
  • 1 cup Peas
  • 400g butter beans/ white beans or chickpeas
  • ½ bunch parsley
  • Vegetable stock
  • 1-2 Lemons

Method

Finely chop onion and garlic – gently fry, once translucent add the fennel seeds and continue to fry for 5mins.  Add the chopped fennel, courgette and soften.  Then add the stock, bring to boil and add spinach, kale, parsley, butter beans and broccoli.  When everything is cooked but not overly so – no more than 10mins.  Add everything to a blender and blitz.  Add lemon juice, salt, pepper and nutmeg to taste.

 

Serve with Seed Bread to really load up on fibre!
